"Southern Eggs Benedict"
1-packet of McCormick's Hollandaise Sauce mix
1-English Muffin or Large "Cathead Bisquit"
4- 3 inch pieces of "Country Curred Ham"
1/4 stick of butter
1/2 cup of water
1-5 ounce can of "Pet Milk"
Melt butter in small sauce pan, pour in water and milk bring to low boil blend in the Hollindaise Sauce stir till
lightly thickened remove from heat and cover.
Lightly brown the the peices of ham
Split, butter and lightly toast the English muffin or bisquit.
Melt a small amount of butter in a skillet and cook eggs
to "over easy"
Place the ham on the muffins, then place an egg on each piece of ham, cover the eggs with an additional piece of ham, put 4 large tablespoons of Hollindaise Sauce over the ham and eggs. Sometimes in the summer you could put a large slice of tomato on the ham before putting the Hollindaise Sauce on the Muffins.
